Warm Roasted Kale, Coconut and Tomato Salad


This is a recipe of Anna Jones's Modern Way to Eat cookbook. The way she approach food & cooking is truly inspiring. This recipe is just wonderful. I wanted to add it to our food and nutrition page on here




Ingredients:

- 250g cherry or plum tomatoes

- Salt & pepper

- Olive oil

- 1 lime

- 160g of kale (roughly sliced, stalks removed if you use kale head)

- Handful of unsweetened shaved coconut

- 1 tbls soy sauce


Dressing:

- Thumb-size fresh ginger grated

- 1 heaped tbls of miso paste

- 1-heaped tbls of tahini

- 1 tbls honey

- 2 tbls olive oil


Method:

1. Half the tomatoes, sprinkle them with salt and pepper, add half lime zest and juice mix it and roast it in the 190 degree pre-heated oven for 15 minutes until juice and started to get a nice colour. Add the kale, coconut and soya sauce, mix it well and put it back into the oven and roast until the kale are crispy and the coconut shave lightly brown


2. Meanwhile mix all the Dressing ingredients together.


3. When the kales are ready, tip them into a big salad bowl, add the dressing, lightly toss them together and serve warm.
